snake gourd (podalangai) kootu

I like snake gourd from young. But I was not found of kootu till my marriage.  After marriage (moving to Singapore) I become more health conscious. Kootu become naturally good choice. Kootu is low in oil and high in protein. Snake gourd is rich in fibre and helps prevent constipation. 


Ingredients

Snake gourd -1/4 kg
black eyed pea dhal -1/4 cup


Turmeric powder -1/4 teaspoon
Sambar Powder -3/4 teaspoon
Oil -2 teaspoon
Urad dhal -1 teaspoon
Coriander seeds – 1 teaspoon
Red chillies – 2
Whole black pepper – 1/4 teaspoon

Mustard – 1/4 teaspoon
Hing/asafoetida – a pinch
Curry leaves -few leaves

Method:

Heat a teaspoon of oil 
Urad dal 1 teaspoon, Coriander seeds, Red chillies, Whole black pepper . Grind it to a smooth paste adding little water.

First cut snake gourd vertically and remove the seeds. Then cut snake gourd into 1/2 inch pieces. 
Cook snake gourd, Black eye Pea in water, adding salt, turmeric powder and sambar powder till soft. Do not over cook.

Once cooked add Ground paste

Heat oil, add mustard seeds ,when it splutters,add hing, curry leaves. Fry for 30 sec and add it to the kootu.
