This rice is pretty nutritious and tasty. Snow Pea is rich in calcium vitamin B1, C, and niacin. I also added tofu to give bit of flavour and protein boost. Mix of cumin seeds flavour and goodness of sprouts gives unique taste to it. We love this rice. Most of the time I avoid white rice but this one taste better only with white basmati rice
Ingredients
Snow Pea Sprout – 4 Cup (Cut it if the sprout is longer)
Basmati Rice – 1 Cup
Onion – 1 (Thinly sliced)
Cumin Seeds – 2 teaspoon
Cardamom – 1 or 2
Cinnamon – 1 Inch
Cloves – 3
Bay leaves – 1
Ginger- Garlic paste – 1 teaspoon
Ghee – 2 teaspoon
Tofu (Firm Tofu) – 1 Cup
Salt as required
Green chillies – 3 Slit into 2
Salt to taste
Oil – 3 teaspoon
Method:
Wash the rice
Heat the kada and add 1 teaspoon of oil.
Fry Rice for 3-4 mins.Keep it aside
Heat the kada and add oil
When the it is hot add Cumin Seeds
When start to crackle add Ginger garlic paste and fry for 1 min
Add Bay leaves, Cardamom, Cinnamon, Cloves and fry till nice smell comes
Add Green chillies and Onion and fry till onion is light brown
Add Snow pea sprout and fry till sprout is cooked
Add salt
Combine Snow pea sprout and Rice in rice cooker
Add 2 cup of water and cook it
Cut the Tofu into small pieces
Let it dry on the paper towel for 15 mins
Heat kada with 1 teaspoon of oil
Add Tofu with turmeric powder and fry till it is cooked. Keep it aside
When rice is cooked add in Tofu and mix it well
Serve with Onion Raitha
