Initially I was planning for Soya Chunks kurma for roti but when I searched my pantry for the soya chunks couldn’t find it.. But had soy granules but not enough. So I decided to add potato with it. This kurma can be a good side dish for the fried rice also. It is very simple and quite tasty one. You don’t believe? try it out your self
Ingredients
Soya granules – 1 cup
Potato – 1 (Peel and chop them into 1/4 inch pieces)
Cumin seeds – 1/2 teaspoon
Curry leaves – 10
Coriander leaves / cilantro – 1 tablespoon (finely chopped)
Oil – 1/2 teaspoon
Mustard seeds – 1/4 teaspoon
For Masala paste
Onion – 1 (chopped finely)
Garlic – 4 pods
Ginger – 1 inch
Coconut gratings – 1/2 cup + 1 tablespoon
Red chillies – 5-7 ( Adjust to your spice level)
Curry Leaves – 20
Gram masala – 3/4 teaspoon
Turmeric powder – 1/4 teaspoon
Salt to taste
Cashew – 10
Poppy seeds – 1/2 teaspoon
Oil – 2 teaspoon
Method:
First let’s get ready for making masala paste. Soak Cashew and poppy seeds. Heat the oil when oil is hot add garlic and ginger. Fry till garlic is brown in color. Add onions and fry till they are transparent. Add red chillies, curry leaves, coconut gratings and fry for 3-4 mins. Add garam masala, salt, turmeric powder, soaked cashew and poppy seeds and mix well. Fry for another 2 mins. Switch off the flame and let it cool down. Transfer this to mixie or blendar or food processor. Grind to smooth paste. Keep it aside
In boiling water add Soya granules and switch off the flame. Leave it hot water for 10 mins. Drain the water and when it is ok to handle squeeze the extra water out of Soya granules.
Heat the pan or pressure pan. Add 1/2 a teaspoon of oil. Add mustard seeds and cumin seeds. Let it crackle. Add curry leaves and potato. Fry for 30 sec. Add Soya granules and mix well. Fry for another min. Add grounded masala and mix well. Add enough water and cook it till 2 whistle.When it cool down open the lid and add coriander leaves and mix well.
Serve hot
