Spanish Rice – simple one pot meal – kids friendly lunch recipe

I had this Spanish rice in my last trip to Brazil. It tasted good and it was pretty close to mexican rice. I wanted to try this at home. I have googled it for the recipe but I couldn’t zero in any one in particular. In the end I made my own with some guesses based on the taste I had. It came out pretty close. Tasted so yummy!

Ingredients:


Long grain rice – 1 cup ( I have used basmati rice)
Vegetable stock – 2 cups
Salt to taste
Cumin powder – 1/2 teaspoon
Onion – 1 (medium. Sliced thinly)
Tomatoes – 2 (chipped finely)
Green Capsicum – 1/2 cup finely chopped
Carrot – 1/4 cup finely chopped
Cooked Potato – 3 tablespoon (optional)
Red chillies – 4-5 (Adjust based on spiciness of your chillies)
Garlic – 5 pods
Oil – 2 tablespoon

Oregano – 1/4 teaspoon (I have used dry)

For garnishing 
Cheese – 2 tablespoon
Tomatoes – 1/2 tomatoes sliced thinly


Method:
Wash and soak the rice for 10 mins. Drain the water and keep it aside. Heat 1 tablespoon of oil and add chillies and garlic and fry till slight brown color.

Heat 1 tablespoon of oil and add chillies and garlic and fry till slight brown color. Remove it and let it cool down completely. Grind to smooth paste.

Add rest of the oil and add onion fry till transparent. Add Tomatoes and fry till mushy. Let it cool down and grind to smooth paste.

Heat the pan again add grinded pastes and fry for a min. Add  all the vegetables, salt. Fry till vegetables are cooked

Add Oregano and cumin powder and fry for another min. Add vegetable stock, required salt and rice. Mix well

Close it with lid and cook it till rice is 3/4th cooked
Transfer it to greased baking dish. Preheat the oven at 180 degree C. Bake it at 180 degree C for 10 mins. 

Serve hot
