I have tasted almond noodles at one of the vegetarian restaurants in Singapore. I love it. As it is near to the office if we can afford (of course time) or need to treat visiting colleagues we will go there. Most of the time I order Almond noodles. Almond in this noodles tastes so fresh. I wanted to recreate that at home. I tried with just almond and red chili it tasted different but delicious. It is very simple Almond base noodles. I have used Pumpkin, turmeric noodles you can use any of your favorite noodles
Ingredients
Noodles-400g (cook per instruction)
Mixed vegetables – 2 cups (I have used capsicum, carrot and cooked broccoli)
Salt to taste
Green part of spring onion – 2 tablespoon
White part of spring onion – 1 tablespoon
Garlic – 4 (Sliced)
oil – 2 tablespoon
Almond – 20 (soak in hot water for 30 mins)
Red chili – 4 -6 (adjust to spice level
Method:
Heat oil. add white part of spring onion, garlic. Fry till slight brown color. Add vegetable, salt. Cook it (I have added Broccoli as I had cooked one if you are using fresh add at this stage itself)
Add ground almond paste. Mix it with 1/2 cup of water. Mix well. Fry for 1 min. Add cooked noodles. Adjust salt mix well. cook for 3-5 mins at low flame.
Serve hot
