Spinach, Mushroom Lasagna


This is one of my mum favourite. I find it very cheesy. You bet, Kids love it. Whenever my mum is in town she will do this. When I asked my kids for the dinner they were suggesting Lasagna. When I checked the fridge I realized that I don’t have 
Broccoli  so I was checking with them whether we can do lasagna with spinach and mushroom. Kids agreed. 



Ingredients:


Lasagna sheets – I hv used 12 sheets. Also I used Instant version

Pasta Sauce – 3 Cups
Spinach – 3-4 cups
Mushroom – 2 Cups
Onion – 1/2 cup
Cauliflower – Cooked 2 tablespoon
Cheese – 4 Cups


Method
Cook Spinach with just salt added
Cook Mushroom with just salt added
Mix all the cooked vegetables and keep it aside

Cook lasagna sheets  per cooking directions. (Note sheets may be cooked in advance.) Stir often to prevent from sticking and be sure that water remains at a boil during the entire cooking to prevent sheets from sticking. I add Tbsp of salt to the water so the sheets are more flavorful. Drain in colander and place in a cool water filled pan to keep from drying out and sticking together.

In dry lasagna pan, Apply thin layer of butter. Arrange  sheet

Apply Pasta Sauce and add layer of all the vegetables
Sprinkle cheese on top 
Repeat the process for roughly 4 layers
If you have extra sauce and cheese you can spread that over the top. 
Bake at 180°C for 20 minutes (Or follow instructions on the pocket). You can use fork Allow to cool before serving.
