Spinach Soup – simple soup recipe – Healthy starter recipe

I do soup at least twice a week. We like something which is simple and lighter version. So most of the time I don’t add Cream to the soup. I have tied both cream version and non cream version for this. I like both the version. I always feel Spinach goes well with Cheese and cream. What I am posting here is without cream. If you want to add cream you can add in the place of Milk or together with milk. Make sure you add milk after switching off the flame. Otherwise it might curdle
Ingredients


Onion – 1 (small.. chopped roughly)
Garlic – 4 pods
Oil – 2 teaspoon
Spinach – 1.5 cups to 2 cups
Jeera / Cumin powder – 1 teaspoon
Pepper to taste
Salt to taste
Milk – 1/2 cup
Corn flour – 1 tablespoon
Grated cheese – 2 tablespoon (optional)

Sugar – 1/2 teaspoon
Cream – 2 tablespoon (optional)



Method


Clean and wash spinach. heat the oil in a pan add garlic and onion fry till transparent. Add spinach. Fry for a min 

Add 1cup of water and salt. Let it cook. Once cooked switch it off and grind it to a smooth paste. 

Mix in corn flour with 1/4 cup of water and 1/2 cup of milk. Add corn flour mixture to the grinded paste. 

Add salt, pepper, jeera powder  mix well. let it boil. 

Garnish it with grated cheese. Serve hot
