Spinach Wheat Rava (rawa) Pongal

I try to include green vegetables at least 3-4 times a week in one form or other. I do all kind of dishes with Spinach. I wanted to do something quick and make one dish that includes all for one of the lazy weekday dinner. Thinking of Pongal ( Like I mentioned in my pongal post.. Pongal is not my dish) initially I was hesitating. In the end my laziness won me over. I tried Spinach Wheat Rawa Pongal. I didn’t regret for a min for the choice I made



Ingredients:


Wheat Rava – 1 Cup
Whole Gram Dhal – 1/4 Cup
Spinach – 4 Cups (finely chopped)
Green Chillies – 5-7 (to your spice levels)
Onion – 1 (Medium size) finely chopped
Tomatoes – 2 Finely chopped
Ginger – 1/2 Inch (Sliced thinly)
Gram Masala Power – 1/2 teaspoon
Cumin Seeds – 1 teaspoon
Mixed Nuts (Almonds/pista/Cashewnuts) – 2 tablespoon
Oil – 1 1/2 tablespoon
Ghee – 1 teaspoon
Curry Leaves – 15 leaves 

Method:


Dry roast Whole gram dhal. Allow it to cool down.
Heat the Ghee. Fry Nuts and keep it aside

In the same Ghee add Cumin seeds and when it is sizzling add Curry leaves fry for 20 sec and keep it aside

Heat the Oil and add Green Chillies,Ginger and Onions. Fry till onion is soft

Add Tomato and fry for 3 – 5 mins

Add Chopped Spinach and fry for 5 mins

Add gram masala powder, salt and 3 1/2 cup water and when it is boiling add dhal and wheat rawa

Transfer this to pressure cooker and cook it for 10 mins (till 2 whistle). Switch it off the fire.

Once the it is cool down remove the cooker lid and add fried nuts, Cumin seeds and curry leaves and mix it well
Serve hot.
