My kids love Peanut butter in fact most kids do. However getting kids to eat sprouts is not easy. As a mom you really wish your kids can eat sprouts as it is high in protein and good for growing kids. My kids will eat sprouts in the salad just because I asked them to do it. They are ok if it is cooked like Sandwich I have posted. So wanted to try this salad in which salad dressing is made with Peanut butter. Kids loved it
Ingredients
Green bean sprout – 2 cups
Chopped raw mango – 3/4 cup (if it is too sour reduce it to 1/2 cup)
Water as required
Chopped coriander leaves – 1 tablespoon
Salad Dressing
Peanut butter – 3.5 tablespoon
Lemon Juice – 1.5 tablespoon (adjust based on sourness of the lemon)
Soya sauce – 1 tablespoon
Garlic – 1 pod ( chopped finely – I have used raw however my kids told me roasted would taste better.. do try out your preferred way)
Chilli sauce – 2 teaspoon (If you are not using Lemon u can reduce this)
Ginger – 1 inch (chopped finely)
I didn’t add any salt or sugar as Peanut butter salt and sugar is good enough for me
Method:
Mix in all the ingredients under salad dressing in bowl
Add chopped raw mango, green sprouts and coriander leaves. Mix well
Chill it for 30 mins and serve.This can go with chapatti also
