My 2nd son and my husband like Badhusha. I had some sugarless koya in the fridge. I was thinking about a dish to make with it. with Diwali around the corner I wanted to try some sweet with it. When was looking options Suryakala came to my mind. I had Maillka badrinath sweet book so I was flipping thro’ it. I saw the suryakala and Chandra kala recipe it is exactly same just the shape. So Decided to try both. Basically Suryakala is in round shape and chandrakala is in half crescent (moon) shape. You can try both for this diwali and let me know the result
Ingredients
For Outer cover
Maida / All purpose flour – 1.5 cup
Melted & cool down ghee – 2 teaspoon
Salt a pinch
Baking Soda a pinch
For Stuffing
Sugar – 1/2 cup
Cardamom – 2 (remove the skin just use the seeds)
Cashew – 10
Pista – 10
Koya – 1 cup
For Sugar Syrup
Sugar – 3/4 cup
water – 3 tablespoon
Lemon juice 1/2 teaspoon
Method:
Take the ingredients in the stuffing section except Koya in the blender or food processor and powder it.
Add it to room temperature koya and make a ball. Divide them into equal size ball (this has to be according to your preffered size. I have used slightly smaller than Marble). Keep it aside
now take Maida, Salt, baking soda and melted ghee in a broader vessel. Add required water to make a soft dough dough. Dough shouldn’t be very sticky. Leave it aside for 30 mins
For making Suriya kala follow below steps. Make sure your maida puri is not too thin otherwise stuffing will come out and spoil the oil
For Making chandrakala follow below steps. Make sure your maida puri is not too thin otherwise stuffing will come out and spoil the oil
Keep all the suryakala and chandrakala ready
Heat oil and at medium flame place the suryakala and chandrakala till brown color.
Drain the oil and keep it in kitchen tissue to drain extra oil. Complete all the suryakalas and chandrakalas
Now Prepare the sugar syrup to once string consistency. Add fried Suryakala and chandarakalas. Leave it for 10 mins. Remove it from Sugar syrup and Let it cool down.
Store it in air tight container. Enjoy!
