Boondi Ladoo or Boondhi ladoo is my hubby favorite. So every time my mum packs for him. The version I post is from her. However this sweet boondi is very simple and even beginners can try out. If you want to do more colorful boondi you can divide the batter and add colors. Do try out this for diwali / Deepavali.
Ingredients:
Besan Flour(Kadalai Maavu) – 1 cup yellow color – very small pinch
Cooking soda – a very tiny pinch(mustard size)
Oil – to deep fry
Sugar Syrup Sugar – 3/4 cup Water – 1/2 cup(sugar should be just immersed so adjust accordingly)
Method: Heat ghee and add raisins. cloves and cashew fry till brown in color. Keep it aside In a bowl take besan flour, turmeric powder, salt with soda. Add water little by little to form a thick paste. Add more water till you get flowing batter. Heat oil. Pour laddle batter over laddle with holes. you can use another laddle to move in circular motion (just shown in pic) cook in low medium flame. till it is cooked (we don’t need this to be very crispy) Once done remove it from oil by draining extra oil. Leave it on tissue paper to drain extra oil. wipe the laddle before pouring again. Repeat the process Add water and sugar in a heavy bottom vessel. Heat till one string consistency Add fried boondhis, fried nuts, cardamom powder, edible camphor (if using) to sugar syrup. Mix well. Leave it aside for couple of hrs and Boondi is ready. Enjoy
