I love the taste of quinoa with Coconut. I have posted Coconut quinoa1 which is done in Indian style.I had some sweet potato which I wanted to use also.So Decided to make one pot meal with Cashew, Sweet Potato and coconut. This is really yummy!
Ingredients:
Sweet Potato – 1 Cooked (make sure it is still firm not mushy) (Peeled and cubed)
Cooked Quinoa – 1 Cup
Salt per taste
Onion – 1 finely chopped
Bay Leaf – 1
Cinnamon Powder – 1/2 teaspoon
Pepper powder – 1 teaspoon
Raisins or Cranberries – 1 tablespoon
Cashew Nuts – 1/2 cup
Coconut – 1 cup (shredded, unsweetened)
Cayenne – 1/2 teaspoon
Method:
Heat the oil in the kada. Add Bay leaves and onion and fry till onion is translucent. Add Pepper, Cayenne, cooked sweet potoato and coconut. Fry well till nice aroma comes out of coconut. Add raisins/Cranberries, Cashew nut and fry till cashews are brown in color. Mix well and fry for another 5 mins . Mix in cooked Quinoa and mix well. Leave it on a medium flame for 3 mins. Switch off and Enjoy the quinoa
Note:
You can cook Quinoa in coconut milk. It will enhance the flavour but I was worried about calories
