I normally have boiled sweet potato as snack. In Singapore we get different types of sweet potato. I love the Purple one but sometime it can be very dry or lot of fiber in it. Since I normally buy from regular vegetable shop in the wet market near my place she advice me when it is really good (so nice of her). But the white variety is always good. In India my mum used to do ladoo / laddu with it. I got the recipe from my mum it will on my blog soon. Today great-secret-of-life also moved to it’s much overdue its own domain. Ingredients
Sweet Potato – 2 medium size
Sugar – 3-4 tablespoon ( I have used brown sugar and adjust to your sweetness and sweet potato sweetness)
Ghee – 1 teaspoon
Cardamom – 1/4 teaspoon
Broken Nuts (of your preference) Cashew or Almonds – 2 teaspoon ( I have used Almond)
Method:
Cook the Sweet Potato. Peel the skin and mash it
Heat the kada and add ghee fry the nuts till it is brown. Keep it aside. In the same kada add mashed sweet potato. Fry for a min. Add Sugar and mix well. Let it Fry till Sugar is fully incorporated ( about 5 mins). Add cardamom powder and mix well. Add fried nuts and mix well. Cook for another 5-7 mins till ghee leaves it. Switch it off and serve hot / cold / warm.
This can last for 2-3 days in the fridge.
