I wanted to try this combo for a while. This is perfect one-pot meal /salad. It is the perfect choice if you are looking for a lighter meal. I have used only 1/3 cup quinoa but you can add 1/2 cup. If you don’t have quinoa you can replace it with red or brown rice or barley too. I have used orange sweet potato. You can try with other varieties, too. It is good for a kid’s snack box. Adding peanuts gives crunchiness to the salad.
Ingredients:
Cooked and diced Sweet potato – 1 cup
Cooked Quinoa – 1/3 cup
Roasted Peanuts – 1/3 cup
Mint leaves – few
Coriander leaves – 1 tablespoon (Finely chopped)
Ginger juice – 1 tablespoon
Lemon juice – 2 teaspoons
Salt to taste
Green chillies – 1 (finely chopped)
Method
Take cooked sweet potato and peanut. Add cooked quinoa & ginger juice.
Add mint leaves and salt. Mix well. Add green chilies and lemon juice. Mix well.
After 30 minutes, you can serve it chilled or at room temperature. Enjoy!
