Sweet potato rice – Lunch recipes – Sweet potato brown rice recipe – Healthy rice recipes

I am still looking for a dish to include sweet potato as part of a meal for my 2nd son. I wanted to try this simple rice for quite sometime. He loves spring onion so I have added more to provide a nice flavour to the rice. This is so simple even bachelors can try. Hurray! My son told me it is something that he can eat. 
Ingredients:


cooked rice – 3 cups (I have used brown rice but you can use your preferred rice)
Ginger juice – 1 tablespoon (you can use chopped ginger. If you are using fresh one take 1 teaspoon)
Spring onion – 1/2 cup
Garlic – 10 pods (Chopped finely)
Salt to taste
Olive oil – 3 teaspoon
Sweet Potato – 2 
Chilli powder – 1/2 teaspoon



Method:


Heat the pan and add oil. Add Garlic and fry till slight brown color. Add Sweet potato and salt and fry till 1/2 cooked

Add chilli powder and ginger juice and cook it fully. Add spring onion and mix well

Add cooked rice mix well.

Switch it off and serve hot
