I wanted to try out something new for this festival season. I had this when I was in India during my last trip. Coconut milk really gave a good flavour for this paniyaram. This perfect for vegan diet. Addition of Saffron gave natural color to the dish. Semolina as such is high in Iron addition of saffron makes it even more richer in Nutrition esp Iron. I have used sugar candy (Kalkandu) as sweetner. I haven’t tried with jaggery or raw sugar. So if you try it pls. send me your pic and feedback. This is perfect for this upcoming festive season
Ingredients
Rava / Semolina – 1 cup
Coconut milk – 1/2 cup (or more)
Pinch of salt
Coconut milk + warm water – 2 tablespoon (Coconut milk)+ 2 tablespoon water
Sugar Candy – 1/2 cup (and Powder it)
Saffron – 2 pinches (reduce it if you don’t prefer)
baking soda – pinch
Cardamom powder – pinch
Ghee / oil for cooking paniyaram – (since I am not vegan I have used Ghee)
Nuts and coconut bits – 3 tablesoon (I have used Almond)

Method:
Heat 2 teaspoon of ghee and add Nuts and coconut bits. Fry till brown
Soak Saffron in coconut milk+ warm water for 30 mins. Add 1/2 cup Coconut milk to Rava, sugar candy powder and soak it for 30 mins.
Heat paniyaram pan. Add ghee/ oil in each hole. Once it is hot add batter (fill till 3/4) close it with lid
cook it for couple of mins turn it over. To get nice round shape you need to turn it over when it is 3/4 cooked. Cook again till it is fully cooked
Take it out and serve hot
