I saw this in Cookingshooking. From the min I saw this I am pretty sure my sons would love it. I wanted to give it a try. I made a few changes to suit our taste as well as for available ingredients. However, there are few ingredients that must (which gives Mexican taste) like rajma, chili flakes. This makes a good party or gettogether a recipe. you can prepare patty, sauce and just do the assembling while serving. You can use leftover rice to make the patty. This can be served as a main meal or as starters. you can try with wheat flour lacha parotta. I have used store brought frozen parotta
Ingredients:
For Arancini Bean patty
Rajma (Cooked) -1 cup
Cooked rice – 1 cup (Overcooked)
Salt – to taste
Roasted Cumin Powder – 1
Black Pepper – 1/2 teaspoon
Red chili flakes – 1 teaspoon
Green chilli – 1 chopped fine
Lemon juice – 1 tablespoon
Coriander chopped – 1 tablespoon
Plain Flour / Maida – 1/4 cup
Water – to make a batter
Bread Crumbs – 1 cup
Oil – to shallow fry patty
For Harissa Dressing
Water – 2 cups
Whole Red Chillies – 9 (Adjust to your spice level)
Shahi Jeera – ½ teaspoon
Garlic 5 cloves
Salt – as per taste
Lemon Juice – 1 teaspoon
Olive Oil – 2 tablespoon
Coriander fresh – 1 tablespoon
Water – 2 tbsp
Hung curd- to make a dressing out of paste around – 3/4 cup
To Assemble & Cook
Lachha Paratha, half-cooked – 5 (i have used frozen)
Chopped Coriander – 2 tablespoon
Butter as required
Method:
Let’s make Harissa dressing first. Heat water and add whole red chili cook for 10 mins.
Once done strain it and remove the stem. Let it cool down.
Once cool down grind it with the rest of the ingredients except curd. Keep it aside. Let’s now do the patty. In a bowl take cooked rajma, rice and mix it well. Add the rest of the ingredients and mix well.
Make small patties keep it aside
Mix in maida flour, pepper powder, and salt. Make a smooth paste
Dip each patty in the paste and roll it in bread crumbs. Keep it aside
Heat oil for shallow frying and arrange patties cook till all sides are browned. Remove it and keep it aside
Let’s make the sauce. Take hung curd/ greek yogurt. Mix in Harissa sauce till you get nice and smooth sauce.
Thaw frozen parotta to room temperature. Heat it in pan. Apply harissa sauce. Arrange patty, coriander leaves
fold it, and apply butter on both sides. heat it till all sides are browned
Serve hot
