My kids love the Thai / Chinese recipes. This is one of the very easy and tasty rice esp if you love spicy food. I have used store brought Red curry paste. Usually I make Red Thai Curry. While making I use coconut bought from shop. However this time I made it with homemade coconut milk. So was I left with some curry paste. I was wondering what to do with it. My kids were suggesting making rice with it. Without second thought I made it and it tasted so nice.
Ingredients:
Cooked Basmati rice – 2 cups
Onion – 1 (medium size. Finely chopped)
Garlic – 7-9 (finely chopped)
Soya sauce – 1.5 tablespoon
Tomato – 1/2 (cube it)
Salt to taste
Spring onion – 2 tablespoon (chopped finely)
Red curry paste – 2 teaspoon (adjust to your spice level and paste spice level)
Oil – 3 teaspoon
Method:
Heat oil in a pan when it is hot add garlic and fry till it is brown. Add onion fry till they are transparent. Add Tomato and fry till it is mushy. Add Red curry paste, soya sauce and salt. Fry 3-4 mins. Add cooked rice. Mix well. Fry in high flame for 2 mins. Add spring onion. Mix well
Now the rice is ready to be served! so easy right?
