I must confess I am not a big fan of pizza however my kids love it. Last week I went out with my friends and they selected a pizza place. All pizza places should have salad. So I was ok. They ordered vegetarian pizza for me even before I reached there. To my surprise the the pizza crust was extremely thin and crispy. The topping was with a different type of mushroom and bit of cheese.. It tasted really good. Immediately I listed thin crust pizza in my to do list. I have pre roasted vegetables as my kids prefer it that way. If you prefer you can add it before baking the pizza. That way vegetables will stay crisp
Ingredients
Dough
All purpose flour – 1 cup
Whole wheat flour – 3/4 cup
Yeast – 1 pocket (I have used Fleischmann’s)
Oil – 1.5 tablespoon
Sugar – 2 teaspoon
Salt to taste
Roasted Vegetables
Bell pepper – 2 cups (I have used all 3 colors)
Spinach – 200g
Mushroom – 5 pieces
Salt to taste
Pepper – 3/4 teaspoon
Oregano – 1/2 teaspoon
Olive oil – 1 tablespoon
Feta cheese – As needed (I have used 250g for all flour)
Method
Roasted Vegetable
Heat one tablespoon of oil in a pan add thinly sliced capsicum and fry with bit of salt. Add sliced mushroom. Add pepper, Oregano and mix well.
Fry till moisture is absorbed add washed spinach and mix well till leaves wilt. Switch it off.
Pizza
Pre heat the oven at highest temp you have. I had only 220 degree C so I preheated for 30 mins till the oven is really hot. Combine all the ingredients under dough section in a large bowl. Add water little by little to make soft dough
Close it with wet cloth and leave it aside for 30 mins (Thin Pizza doesn’t require long fermentation). Dough will turn slightly sticky. It is ok.
Dust the flour and knead the dough for another 10 mins. Take a Orange size ball and roll out to thin chapati use additional flour if dough stick to rolling pin
Spread the pasta sauce Bake it for 5 mins.
Remove it and add roasted vegetables and cheese. Bake it again till sides are brown in color. It takes about 7 mins. My kids wanted crispy base so I baked 2 mins extra So you can see the difference in 1st and 2nd photo
Serve hot
