Tofu Quinoa Scramble

What a power pack combo Quinoa and Tofu. It is a perfect protein rich food and quite easy to do. This is one of the quinoa dishes which is simple to do and perfect for lunch box. It is also a perfectly balanced food (with loads of vegetables and Tofu).
Ingredients:


Cooked Quinoa – 1 cup
Carrot – 1/2 (chopped finely)
Onion – 1 tablespoon (finely chopped)
Silken Tofu – 1.5 cup (fully mashed)
Oil – 1 tablespoon
Mushrooms – 1 cup (chopped)
Spring onion – 1 cup
Soy Sauce – 1 tablespoon
Pepper powder – 1 teaspoon



Method:


Heat the pan / kadai. Add oil and add onion. Fry till onion is cooked. Add red pepper, chopped carrot, Mushroom and cook it. Add tofu and fry for 3-5 mins. Add cooked Quinoa and fry for another min. Add soy sauce, pepper powder. Mix well. Add spring onion and fry for some more time.
