I love Thai however till recently my hubby was not a big fan of it. Now a days I believe his taste buds are changing. My kids always love Chinese, Malay and Thai cousin. My 2nd son who is not a big fan of lemon also like it in Thai Dishes. Most of the time when I do noodles I do dry noodle very seldom I do soup base noodle dish. This one is one of the light and healthy one pot noodles / meals. For the Tom Yam soup I have followed the same recipe I have posted before
Ingredients:
Rice Vermicelli / Rice beehoon ( I have used brown rice) – 400g or as you need
Method:
Shallow fry Tofu till is light brown. Keep it aside. Cook beehoon as per instruction. Drain the water and keep it aside
In a large stock pot, heat the vegetable oil over medium-high heat. Add garlic and fry till they are brown in color. Add Tomatoes and fry till they are mushy. Now add all the vegetable, Lemon grass, galangal, lime leaves. Mix well. Add vegetable stock / water. When it start to boil add vegetable stock. Bring it to boil. Add all the vegetables and let it boil. Add fried tofu. Boil for another 30 sec. When it boiling add Sauces, if you are adding add sugar at this stage and stir it well. Add salt after checking for it (Since vegetable stock already has it check first). Reduce the flame and boil it for another 7-10 mins. Using a slotted spoon, remove the lemongrass stalks and kaffir lime leaves. Add coriander leaves
To Assemble the noodles just before serving add take a bowl add cooked vermicelli and pour the soup on it.
Serve hot
