Tomato Sevai – Tomato Idiyappam – Simple snack recipe – Simple dinner recipe – Simple breakfast recipe

I normally make different kind of Sevai  with left over idiyappam. I saw this readymade version of sevai in the shop and brought it. However it was lying in my self for a while. Other day I was checking the kitchen cupboard and saw this pocket. I kept it  outside so that I won’t forget about it. I had decided to try some light meal with this for dinner. I made this tomato sevai and every one loved it.
Ingredients:


Cooked Sevai / Leftover Idiyappam – 2 cups
Fully ripe Tomato – 3 (medium size. Chopped finely)
Onion – 1/2 (Medium size. Chopped finely)
Ginger Garlic paste – 1 teaspoon
Peas – 3 tablespoon 
Salt to taste
Chilli powder – 1 teaspoon (Adjust to your spice level)
Turmeric powder – 1/4 teaspoon
Green chillies -1 (slit into 2)
Cashew nuts – 10- 15 
Oil – 2 teaspoon
Mustard seeds – 1/4 teaspoon
Urad dhal – 1 teaspoon
Chana dal – 1 teaspoon
Curry leaves – 10
Coriander leaves – 2 tablespoon (finely chopped)



Method:


Cook the Sevai per package instructions if using ready made. Cook the Peas in microwave and keep it aside. Soak the cashew for 30 mins and grind to smooth paste

Heat the kada and add oil. When it is hot add mustard seeds and let it pop. Add urad dhal, chana dal, curry leaves. Fry till dals are brown in color. Add onion and fry till transparent. Add tomatoes and salt fry till Tomatoes are mushy. Add Turmeric powder, chilli powder, Salt. Fry for 2 mins

Add Grinded cashew paste. Mix well Fry for another 3 mins. Add cooked peas and sevai and mix well. Cook for another 3 mins

Switch it off and add coriander leaves. Mix well. Serve hot
