Tomato Soup

I love homemade tomato soup. It is very simple and tasty recipe if you have ripped red tomatoes. Even though it is one of the basic recipes, some restaurants spoil it by adding more tomato sauce. I like to do it with fresh tomatoes. My 2nd son who is not a big fan of tomatoes liked this simple version of tomato soup. Some times I do it with just tomatoes. This time I have added carrot as I wanted little sweetness in the soup. 

Ingredients:


Tomatoes – 5 (Medium size. Chop finely)
Tomato sauce – 2 teaspoon
Carrot- 1/2 cup
Pepper – Per taste ( I have used 2 teaspoon of freshly powdered pepper powder)

Salt per taste
Bay leaves – 1
Onion – 1.5 Medium size. Chopped finely
Garlic – 5-7 pods. Chopped finely (1 tablespoon)
Oil – 2 teaspoon
Coriander Leaves – 1 tablespoon
Corn Flour – 1/2 teaspoon



Method:


Mix the corn flour in 4 tablespoon of water. Keep it aside
Heat the pressure pan or kada. Add oil. When Oil is hot add bay leaf and  Garlic. Fry till it is brown in color. Add Onion fry till it is soft. Add tomatoes and carrot. Fry for another 2-3 mins. Add water and salt and cook till 2 whistles

Let it cool down. Remove the bay leaf. Drain the excess water and keep it aside. Transfer cooked onion/tomato/carrot to food processor grind to smooth paste. Boil the excess water and bay leaf first. Add tomato paste and let it boil. Adjust the salt if required. Add enough water to get preferred consistency.

Add Tomato sauce and pepper powder. When it start to boil add corn flour mix. Boil it for another 3 mins. Switch it off and add coriander leaves.

Serve hot

    Its so inviting. I will try for next weekend. While such a soup is usually drunk just like that, we like it drenched on our rice. Simplicity is so alive in the taste of this soup.
