When I came to Singapore, in the first couple of weeks, I had this Murtabak (vegetarian). It was very filling and it was made with Mushroom. Those days mushroom was not my favorite vegetable. So I felt it was an overdose of mushroom. After that, I haven’t tried it again. Sometime last week I tried another version with Soya chunks and I liked it. Last week I had leftover Parotta dough so I had decided to try it out. Everyone in the family loved it. If you want a combination of mushrooms and soya chunks you can do it also
Ingredients
For Stuffing
Onion – 1 medium size – Finely chopped
Tomatoes – 1 (make a puree)
Capsicum – 1/2 cup (any color of your choice)
Potato – 1 (Cook and mash it)
Soya Chunks – 1 cup
Ginger garlic paste – 1 teaspoon
Roasted Cumin seeds powder – 1/2 teaspoon
Coriander powder – 1 teaspoon
Turmeric powder – 1/4 teaspoon
Garam masala – 1/2 teaspoon
Green chilies – 1(Finely chopped)
Mint Leaves – 7-10 (Finely chopped)
Coriander Leaves – 1 tablespoon (finely chopped)
Oil – 1 tablespoon
Salt to taste
For Mutabak
Dough (Paratha or Naan Dough) as required
Oil for spreading as well us cooking
Method:
Heat water with salt. Add Soya chunks and cook it.
Drain it and squeeze to take out extra water
Heat oil. Add onion, salt and fry till slight brown. Add ginger-garlic paste. Fry for another 1 min. Add green chilies and mint leaves. Continue to fry.
Add Tomato puree. Let it boil. Add roasted cumin seeds powder, turmeric powder, coriander powder and garam masala. Fry till nice aroma released.
Add capsicum and cook it. Add mashed potatoes and mix well.
Add Roughly pieced soya chunks. and 2 tablespoons of water. Continue to cook for another 5 mins in low flame with lid closed. Remove the lid and add coriander leaves. Mix well. Stuffing is ready
Take the Lemon size dough to apply oil to your hand and oil on the surface Spread it with our hand till it is very thin
Place stuffing in the center spread it. Close it as you see in a pic or in the video.
Heat flat pan. Add oil. Place the rolled Murtabak.
Cook till brown spot appear. Turn it over and cook again.
Serve hot
