Vegan Cinnamon sugar donuts recipe – Baked Vegan doughnut recipe – Almond Doughnuts recipe

When I saw this in Facebook I have bookmarked to try it out. This recipe is adapted from there,  I have posted fried version of the doughnut which was huge hit at home. This one is healthier as it is baked not fried and also uses Almond flour which high in protein vs plain flour yet there is no compromise in taste. I normally do Waffles or pancake with almond flour. This doughnut (donut) is another recipe with almond flour. This is perfect for a snack or breakfast or brunch. Kids would love it for sure

Ingredients

Almond flour – 3/4 cup

Rice flour – 3/4 cup
Potato starch – 6 tablespoon
Baking powder – 2 teaspoons
Maple syrup – 1/2 cup + 2 tablespoon
Coconut milk (lite) – 1/2 cup
Salt – 1/2 teaspoon
ground Cinnamon – 1 teaspoon
For Dusting 
Coconut Sugar – 6 tablespoon

Method:

Preheat oven at 180 degree C. Grease donut pan keep it aside. In a bowl take almond flour, rice flour, potato starch, baking powder, cinnamon powder & salt. Mix well.  

Now add Maple syrup, Coconut milk and mix well. 

Dough should be in the cake batter consistency. fill doughnut batter in doughnut pan. 

bake it for 12- 15 mins at 180 degrees C or till inserted stick comes out clean. Remove it from oven and let it cool down for 5 mins. Prepare sugar coating by mixing in sugar and cinnamon powder (under Cinnamon sugar). Coat warm donut with cinnamon sugar
