I have posted veg cutlet no onion, garlic before however I love the version with onion too. Esp the one I get it in push cart near my mums place. This guy sell cutlet from my college days.. I really love this version. Other than onion he has beetroot also. I was looking to try this version for quite sometime but ended up with no onion version as my first son prefers without onion. Other day he was having another appointment so I was making dinner just for ourself so I decided to try this version. It came out so nice. I have done shallow fry but if you prefer you can do deep fry too.
Ingredients
Onion – 1 (finely chopped)
Ginger paste – 1/2 teaspoon
Garlic paste – 1 teaspoon
Green chillies – 1
Mint leaves – 10 (roughly chopped)
Beetroot – 1/4 cup
Beans – 1/4 cup
Carrout – 1/2 cup
Cooked potato – 2 (mashed)
Coriander leaves – 1 tablespoon
Salt to taste
Turmeric powder – 1/2 teaspoon
Coriander powder – 2 teaspoon
Garam masala – 1/2 teaspoon
Red chilli powder – 1/2 teaspoon
Bread crumbs – 1/2 cup (or more)
All purpose flour – 1/2 cup
Oil for shallow fry
Oil – 3 teaspoon
Method:
Heat oil. Add Onion and fry till brown in color. Add ginger garlic paste & green chillies. Fry till raw smell goes off
Add all the vegetables and cook with salt. Add cooked Potato, Turmeric powder, coriander powder, garam masala and chilli powder. Mix well.. Continue to cook till raw smell goes off. Add coriander leaves and mix well. Switch it off.
When is ok to handle make lemon size balls
Flatten each balls. Keep it aside. Now add salt and water to all purpose flour in a bowl. Make thick paste
Dip each cutlet and roll them with bread crumbs. Repeat for all cutlet. Keep it aside. Heat oil for shallow fry.
once oil is hot arrange cutlet. Cook them in low flame till brown in color. Turn them over and cook again. Cook till all sides are brown in color.
Once done remove it and serve hot
