I was in India last week for a quick family visit. My mom made this mixed vegetable korma (kuruma/ kurma) It was thicker than normal korma. It tasted different and also I could not taste any normal kurma masala like cinnamon or cardamom or coconut or gram masala. I am pretty sure my 2nd son would like it. So I asked my mum for the recipe. I had noted down the recipe. As expected my son loved it. I had this with my Chapathi. I skipped paneer & potato but you can add paneer and potato
Ingredients:
Mixed vegetables – 2 cups
Onion – 1 (slice it)
Tomatoes – 1/2 (Chopped)
Cashew nuts – 15 – 18 (soaked for 30 mins)
Milk – 1/2 cup
Salt to taste
Oil – 2 tablespoon (I have used coconut oil)
Coriander leaves – 1 tablespoon (chopped finely)
Red chilli powder – 3/4 teaspoon (adjust to spice level)
Coriander powder – 2 teaspoon
Turmeric powder – 1/2 teaspoon
Coriander leaves – 1 tablespoon
Method
Grind Soaked Cashew with milk.
Heat oil. Add Onion and fry till transparent. Add tomatoes and little salt. Fry till mushy.
Add Coriander powder, turmeric powder and red chilli powder. Fry till raw smell goes off
Add mixed vegetables, salt and water let it boil and vegetable half cooked
Add Cashew paste and mix well. continue to boil till raw smell goes off and vegetable cooked. Add coriander leaves and mix well. Switch it off
Serve hot
