Whenever we eat in North Indian restaurant I used to order Kebab as starter. Flavour of oven roasted kebab / Kabab is unique and I love it. Recently I brought stove top grill pan So wanted to try the kebab at home. Mixed vegetable is good option I have posted Dahi kebab everyone in the family loved it. Addition of besan flour in the kebab gives unique taste. When I used the stove top grill pan it was close to what you get from restaurant (yeah not exactly same. Tandoor oven really really gives real “burnt flavour”)
Ingredients:
Cooked Potato – 2 medium size
Besan flour – 2 tablespoon (heaped)
Mixed vegetables – 2 cup (I have used beans, carrot and cauliflower)
Onion – 1 small (finely chopped)
Cumin seeds – 1 teaspoon
Green chillies – 1
Garlic paste – 3/4 teaspoon
Ginger Paste – 1/4 teaspoon
Red chilli powder – 1/2 teaspoon
Coriander powder – 1 teaspoon
Garam Masala- 1/2 teaspoon
Turmeric powder – 1/2 teaspoon
Salt to taste
Oil – 3 teaspoon (for masala+ as required for cooking Kebab)
Bread crumbs – 1/4 cup
Mint leaves – 15-17 leaves
Coriander leaves – 2 tablespoon (finely chopped)
Cashew nuts – 1.5 tablespoon (finely chopped)
Method:
Heat 3 teaspoon of oil and add cumin seeds. Let it crackle. Add onion, Green chillies Fry till it is transparent. Bring it to the side. Now add Besan flour fry till nice aroma released.
Add Mint leaves, Ginger Garlic paste and required salt fry till raw smell released. Add vegetables.
Add Chilli powder, coriander powder, garam masala and turmeric powder. Add salt and required water. Cook the vegetables.
Once Vegetable is cooked switch it off. Let it cool down. Grind it with Cashew and coriander leaves.
In a broader vessel add cooked potato and mash it. Add grinded paste to it.Add bread crumbs. Mix well to get stiff dough.
Apply oil to your hand and take big ball size vegetable dough. And shape it like in video. Insert stick. You can put the stick first and do shaping too
I normally keep it in freezer for 30 mins. Heat pan with oil for cooking Kabab
Once pan is hot place the kabab and brush oil . Let it cook turn over at regular interval and cook all side
Take it out and serve hot
