Vegetable Soup

Our family is big fan of soup. These days we having no stop rain in Singapore. We were in a mood for something hot with only 30 mins left for the meal I have decided to quick mix vegetable soup. It is really easy that even bachelors can do it and tasty too. Perfect for cold weather and good for dieters also. 

Ingredients:

Carrot – 3 tablespoon
Cabbage – 4 tablespoon
Spirng Onion – 2 tablesoon (white) 2 tablespoon (green) Finely chopped
Celery – 2 tablespoon (finely chopped)
Green chillies – 4 Slit into 2 (Adjust to your spice level)
Capsicum – 4 tablespoon ( I have used Red and yellow)
Oil – 1 teaspoon
Corn flour – 1 tablespoon
Garlic – 7-9 pods
pepper powder to taste
salt to taste
Sugar – 1/2 teaspoon (Optional I didn’t use it)


Method:

Chop the vegetables finely. Separately chop the spring onion  bulb(white portion) and leaves. Keep it aside
Mix Cron flour in 4 tablespoon of water
Heat the kada and add oil. When Oil is hot add Green chillies and fry for 30 sec. Remove the Green Chillies (the spicyness would hv passed to oil) add white portion of spring onion and Garlic. Fry till Garlic is crisp.  

Add vegetables (cabbage, carrot, celery and Capcicum), Salt and sugar. And fry for 30 sec. Add water ~4 cups and let the vegetables cooked. Make sure vegetables are not overcooked. Add Cron flour paste. Mix well without any lumps.



Add  Pepper powder. Cook for another min. 
Decorate with chopped green spring onion and serve hot with your favourite bread.
