Vegetarian Mee Goreng recipe – Vegetarian Noodles – Kids friendly recipe

After big hit of Nasi Goreng I wanted to try more Indonesian food. I know kids eat those when they take meals outside. Some of these dishes I thought tastes good with egg etc.. I am the only vegetarian at home. However my 2nd son is allergic to eggs. Last week when I was in Malaysia I tried veg version of Mee Goreng. It tasted good so I have decided to give it a try. I was searching for a recipe but I couldn’t pick one specific. So I have decided to try on my own. I also decided to replace yellow noodle with wholegrain noodle. You can try with your favourite version of noodles

Ingredients:


Noodles – 500g (of your favourite choice)
Tofu – 75g (extra firm)
Bean sprouts – 1.5 cups
Mixed vegetables – 1/2 cup (I have used green and yellow bell peppers. You can try carrot and cabbage too)
Onion – 1 (finely chopped)
Tomatoes – 2 (roughly chopped)
Salt to taste
Cooked Potato – 1 (cubed into 1/4 inch cubes)
Oil –  3 teaspoons


Sauces


Soya sauce – 4 tablespoon
Chilli sauce – 1 teaspoon
Sriracha sauce – 2 tablespoon (adjust to your spice level)
Tomato sauce – 3 tablespoon



Method:


Cook the noodles according to the instructions on the pack

Mix in all the sauces and keep it aside. Cut the tofu into 1/4 inch cubes. And shallow fry Tofu with 1/2 teaspoon oil. Keep it aside

Heat rest of the oil. Add Onion and fry till they are transparent. Add Tomatoes and fry till they are mushy. Add vegetables. Potato, Fried Tofu and beans sprouts and mix well. Let it cook for 3-5 mins. And add mixed sauces and mix well. Cook for a min. Now add cooked noodles. And fry at high flame for 3 mins. Stir in between

Serve hot
