Vegetarian Tortilla Pizza Recipe – Simple breakfast recipe – Kids friendly recipe – Kids snack recipe

My kids love Pizza. Well anything with Cheese. I love to make tortilla wraps for weekend brunch. They love it. In addition to making normal pizza base I make pizza with tortilla, left over chapathi, bread or Bagels. You can do the below recipe with any of the above. Even though I make this very often never got a chance to do final click as kids would wait for it and literally behind me so that they can eat the moment I bake it. My kids prefer the vegetables to be cooked. I also find it tastes better also. But if you are ok with raw vegetables pls. skip the first 2 steps
Ingredients:


Tortilla Wrap – 4
Mushroom –  300 to 400 g
Green Capsicum / bell pepper – 1/2 small size (slice them into thin strips)
Carrot – 1/2 (small) cut them into strips
Onion – 1/2 slice thinly
Tomatoes – 1 (Slice them into thin round slices)
Salt to taste
Feta cheese – 4 teaspoon
Grated Parmesan – 1 tablespoon for each wrap
Olive oil – 1 teaspoon (if you are adding vegetable raw into the wrap you don’t need oil)
Pasta sauce – 1/2 teaspoon per wrap (adjust as u need)



Method:


Heat the pan add oil. Add mushroom and fry it in high flame till mushroom is 1/2 cooked. Add rest of vegetables, onion and  salt. Mix well and let it cook 3/4th Make sure vegetables still maintain the crunchiness. Switch it off and keep it aside

Pre heat the oven at 180 degree C. Now take baking tray place the wrap. Spread the sauce. Arrange vegetables and add tomatoes on the top. Add crumbled Feta cheese. Sprinkle Parmesan cheese. Bake it at 180 degree C till cheese melts (mine took about 3 mins)

Serve hot
