Wheat Cake with Jaggery (Eggless Wheat Cake)

These days our family love home baked cake. Since I do bake quite often I try to look for some healthy options. I wanted to bake some wheat flour based cake. I was searching thro’ net and saw this great looking cake at sipcy chilly. I have modified based on my taste and availability of the ingredients.
Ingredients:

Wheat flour – 1.5 Cups
Wheat Germ – 1/2 Cup
Oats – 2 tablespoon
Jaggery – 1/2 to 1 cup (grated and loosely filled. I am not sweet person so reduced it to 1/2 cup but original recipe calls for 1 cup. I have melted jaggery and filtered it to remove the impurities. Also Added the Jaggery syrup when it is warm to the cake batter)
Milk – 1.5 cup (plus a tablespoon if you feel the batter too thick before transferring to the pan)
Oil – 1 cup ( sunflower or rice bran oil)
baking Soda – 3/4 teaspoon
Baking powder – 3/4 teaspoon
Vanilla essence – 1 teaspoon
Salt – Pinch
All purpose flour – 1/2 teaspoon (for dusting the baking pan)

Method:

Pre Heat the oven at 180 degree
Grease the baking pan and dust it with flour

Sieve flour, salt, Baking soda and  Baking powder twice or thrice to combine or whisk in a bowl. Add wheat germ, Oats and mix well.

Add milk, Vanilla essence, Jaggery and oil. Combine dry ingredients and Combine gently with spatula or spoon. Pour the batter in the creased baking tin

Bake in a preheated oven for 25-35 minutes with temperature set to 180 deg C or until done (When toothpick inserted it comes out clean. Mine took 35 mins).
