I have seen this version of poli in few blogs last few years. Since I am not a big fan of poli, I kept postponing this. With the start of the festive season, this makes perfect for naivedyam. So I wanted to try it. I have tried with wheat flour, but you can do it with normal all purpose flour. For traditional puran poli or thenga poli pls. refer to my other posts. Carrot stuffing is very easy and quick to make.
Ingredients:
For outer layer
Wheat flour – 1 cup
Oil / Ghee – 2 tablespoon
Salt to taste
curd – 1 tablespoon
turmeric powder – 1/4 teaspoon
Oil for cooking poli
Stuffing
Grated carrot – 1 cup
Jaggery – 1/2 cup
Fresh coconut grating – 1/4 cup
salt – pinch
Cardamom powder – 1/4 teaspoon
Ghee – 1 teaspoon
Method:
In a broader bowl add flour, salt, 1 tablespoon of oil / ghee. Mix well till oil or ghee is applied to flour.
Now add water little by little and make smooth dough. Apply 1 tablespoon of oil. Close with wet cloth and keep it aside for 1-2 hrs
Now prepare stuffing, in a pan take 1 teaspoon of ghee and all ingredients under stuffing except Cardamom powder.
Continue to mix till it become thick. Add cardamom powder continue to cook till it is solid mass. Switch it off. Let it cool down
Once ready take equal size of stuffing and outer dough.
Roll the dough into little tick sheet. Place the stuffing at center. Bring the sides together to to make ball.
Roll this into thick disc. Heat pan
Place rolled poli. Drizzle ghee around it. Cook it low flame. Once done turn it over and cook again
Once done take out. Now it is ready for your pooja
