After my first son’s birthday, my 2nd son also wanted to have birthday cake which is home baked. I wanted to bake same chocolate cake since it came out so well that everyone who tasted it liked it… But my son insisted he wanted something different and kept on bugging me for white chocolate base. I did some research in the internet could not find any eggless version.. I almost thought of making with egg. Given that he is allergic to egg, I still want to try something without egg. In the end I made up my own recipe. I was nervous about how it will turn up so much so that I even forgot to take step by step photos for Frosting. But in the end everyone loved it.
Ingredients for cake:
- 3 cups flour
- 2 teaspoon baking soda
- 1/2 teaspoon salt
- 2 cup water
- 1 cup sugar (sweetness is just nice.. If you are sweet tooth increase it by 1/2 cup)
- 2 teaspoon vanilla
- 2 tablespoon white vinegar
- 1/2 cup Oil
- 140g of white chocolate broken into pieces
Combine water, vanilla, vinegar, oil and mix well. Add Sugar and mix it well till sugar is fully melted (I have used hand held mixer). Add Melted white chocolate and mix it well
Combine the flour, baking soda and salt mix well. Add the four to wet ingredients (add it in 2 batches) mix well till it is smooth.
Ingredients For Frosting:
160g White Chocolate, melted
57 grams (1/4 cup) cold, unsalted Butter
120 grams (1/2 cup) Sour Cream
270 grams (2 1/4 cups) Icing Confectioner’s Sugar, sift after measuring
Method:
Combine white chocolate through butter; blend on medium speed until combined.
Add sour cream, beat til well mixed.
Add Icing sugar, beat for several minutes, until slightly fluffy. Place frosting in the fridge for about 15 minutes, stirring every couple minutes (to prevent any uneven hardening), or until the frosting is firmed up.
Ingredients For Decoration:
1/2 Cup of White and dark chocolate shavings
Method:
Apply sugar syrup on the cake and apply the frost
Stake another cake on the top and cut the sides (Edges) util both the cakes are in equal shape.
Apply the frosting all over the cake. Decorate the cake to your desire
Decorate it with chocolate shaving
