My kids love cupcake or muffin for their weekend breakfast / brunch. Recently I tried Savory muffin with spinach and Feta cheese. It was big hit. After that I almost did it 3 consecutive weeks for their breakfast. I got bored with it so wanted to try other version of Savory muffin. I know Zucchini goes well in any baking dish. So I have decided to use Zucchini in my recipe. Also this time I wanted to try without cheese.
Ingredients:
Whole wheat flour – 1 cup
All purpose flour – 1/2 cup
Butter milk – 1 cup
Egg replacement – 2 (I have used orgran no egg)
Melted butter – 6 tablespoon
Salt to taste
Mixed herb – 1 teaspoon
Pepper Powder – 1/2 teaspoon
Baking powder – 1.5 teaspoon
Grated Zucchini – 100g (Remove the skin and grate it using big hole)
Chopped Spring Onion – 3/4 cup
Milk – 1/2 cup
Toasted Sesame seeds – 2 tablespoon +1 tablespoon
Method:
Shift together Whole wheat flour, all purpose flour, salt, baking powder, pepper powder. Add mixed herb and mix well.
Add Orgran no Egg, butter milk, room Temp melted butter, Milk (room temp) mix well.
Add Grated zcchini, chopped spring onion, Toasted 2 tablespoons of sesame seeds mix well.
Add flour and fold it well. Grease the muffin tray and divide the dough into 6 equal muffins
Pre heat the oven at 180 deg. Bake muffin at 180 degree for 22 mins or till inserted tooth pick comes out clean
Completely cool down and enjoy

Hey these look really yummy and healthy. . Only doubt was that I don't have egg replacer on hand can I use eggs instead? And if yes, then how many?
yes u can use Egg. 2 eggs for this measurement
