Yellow Pumpkin Dry Curry / Stir Fry

I buy yellow pumpkin every week. However so far never tried dry curry with that. My kids love pumpkin sambar. This time I brought bigger piece. So I decided to do dry curry with it. My aunt used to do it. So I called her to get the recipe. It is so quick and tasty dish. Everyone in our family loved it. 

Ingredients:


Pumpkin – 1.5 cup
Small Onion – 10
Coconut – 3 tablespoon
Cumin Seeds – 1 teaspoon
Red Chillies- 4
Pepper Corn – 1/2 teaspoon
Oil – 1 teaspoon
Mustard seeds – 1/4 teaspoon
Urad dhal – 1 teaspoon
Bengal gram dhal – 1/2 teaspoon
Curry Leaves – 10-15



Method:


Cut the pumpkin into 1 inch cube (I use the pumpkin with skin but if you prefer remove the skin)
In a kada fry Small Onion, Cumin seeds, Red chilli and pepper in 1/2 teaspoon of oil till onion is soft. Add coconut and fry for 1 mins. When it cools down grind together Small Onion, Coconut, Cumin seeds, Red chilli and pepper with little water

Heat the kada and add oil. When oil is hot add mustard seeds. Let it pop add urad dhal, Bengal gram dhal and curry leaves. Fry till dhals are brown in color

Add pumpkin and fry for a min. Add grinded paste and little water. Cook till pumpkin is cooked (make sure it is not mashed) You can close the kadai while cooking. Once it is cooked turn the flame to high for 3-4 mins and stir regularly (make sure you don’t burn it).

Switch it off and serve hot
