I am big fan of one pot meal. Esp on Sunday. I love young coconut. But my rest of the family do not. Knowing all the goodness of young coconut I am still looking to include it as part of our diet. I tried this rice and they liked it. My son told me it tasted different yet nice. I told him that I had used ilaneer instead of water to cook the rice. He told me i t tastes good
Ingredients
Bastmati rice – 1 cup
ilaneer water / Young coconut water – 2 cup
Mixed vegetable – 1 cup (Beans, carrot, cauliflower)
Onion – 1 (sliced finely)
Tomatoes – 2 (chopped finely)
Garlic – 4 pods (chopped finely)
Ginger – 1 inch (chopped finely)
Coconut from young coconut – 1/4 cup
Salt to taste
Turmeric powder – 1/4 teaspoon
Red chilli powder – 1 teaspoon
Oil – 1 tablespoon
Cinnamon – 1 inch
Cardamom – 2
Cloves – 3
Bay leaves – 1
Coriander leaves – 1 tablespoon (finely chopped)
Method
Heat 2 teaspoon of oil. Add garlic and ginger. Fry till brown in color. Add onion and fry till transparent. Add tomato and fry till mushy. Add turmeric and red chilli powder. Fry till raw smell goes off. Switch it off and let it cool down.
Grind to smooth paste with young coconut flesh. Heat the oil and add cinnamon, cardamom, cloves and bay leaves. Fry till nice aroma released. Add grinded paste. Fry for a min
Add mixed vegetable. Fry for a min. Add Coconut water and water (if required) totaling up to 2.25 cup.
Add Bastmati and mix well. Let the rice cook till 3/4th done. Add Chopped Spring onion. Cook it completely
