Peanut Rice

Our whole family is die hard fans of peanut.. Anything made with peanut. I guess this is in our family genes because my grandmother, my father, my mother all of them love peanut. Even though it is good because of the protein it is also high in fatty content. I normally include peanut once a week in our meals. This rice is quick lunch box fix. My kids love it.




Ingredients:


Cooked Rice – 1 Cup
Peanuts – 3/4 Cup
Seasame (sesame) seeds – 1 teaspoon
Red chillies – 10 (Adjust it to your taste. Since we are using nuts and coconut we need to add more chillies than normal)
Grated dry coconut – 2 tablespoon
Turmeric Powder – 1/4 teaspoon
Mustard Seeds – 1/4 teaspoon
Black Gram Dhal (Urad Dhal) – 1 teaspoon
Bengal Gram Dhal – 1 1/2 teaspoon
Cumin Seeds  – 2 teaspoon
Curry Leaves – 10
Salt as required
Oil – 1 tablespoon



Method:


Heat the kada and dry roast Peanuts. Cool it off. Remove the Red skin from Roasted peanuts. Pound it coarsely

In same kada dry roast Sesame seeds and powder separately

Heat the teaspoon of oil and fry red chillies and coconut till light brown. Cool it off and powder separately

Heat the rest of the oil and add mustard seeds, Cumin seeds when it start to splutter add urad dhal, bengal gram dhal and curry leaves. Fry till dhals are brown in color



Pour over the rice. Mix in Salt and all the powdered ingredients.

Mix well and serve hot
