I have posted regular pav bhaji masala in my space. I make few variations with normal one some time I add spinach, sometime soya granules, some time cheese and sometime paneer esp when I make homemade paneer, Sometime I serve this with normal roti / naan / Kulcha also. I will be posting these variations in upcoming posts
Ingredients:
Mixed vegetables – 3 cups (I have used beans, carrot and cauliflower, Chop the vegetable finely)
Paneer – 1.5 cups (grated)
Cooked Potato – 2 (Mashed)
Onion – 1 (finely chopped)
Tomatoes – 2 (finely chopped)
Garlic – 4 pods (Chopped finely)
Ginger – 1 inch (chopped finely)
Pav Bhaji masala – 2 teaspoon
Garam masala – 1/4 teaspoon
Green chillies – 2
Red chilli powder – 1 teaspoon (adjust to your spiciness)
Salt to taste
Cumin seeds – 1 teaspoon
Curry leaves – 20
oil – 3 teaspoon
Coriander leaves – 1 tablespoon
Method:
Thaw the paneer and grate it finely
Heat the pan and add 2 teaspoon of oil. Add garlic and ginger fry till garlic is brown in color. Add Onion and fry till they are transparent. Add tomatoes and fry till mushy. Add turmeric powder, red chilli powder, garam masala, pav bhaji masala and fry till nice aroma is released. Switch it off and let it cool down. grind it to smooth paste.
Heat the kada with rest of the oil. Add cumin seeds let it crackle. Add grinded paste and 1 cup of water. Let it boil add mashed potatoes. Mix well.
Add all the vegetables and required salt. Mix well. You can cook it by closing lid or transfer to pressure cooker and cook till 3 whistle ( I used cooker). When cooker cool down completely open the lid and start the flame in low flame. Mash the vegetable. Add grated paneer. Mix well. Cook for another 3-4 mins. Add coriander leaves and switch off the flame.
Serve hot with roti / bread / Pav
