Diwani Handi – Mixed vegetable in Rich Spinach Gravy – Vegetarian Gravy – Vegetarian Side dish for fried rice or roti or naan or chapathi

The other day when Visiting a North Indian restaurant with my friends we ordered Diwani Handi. We were pleasantly surprised by the taste of it. For all of us that was the first time we ordered the dish. And we all loved it. We were guessing the ingredients in it.  After that I was searching for the recipe on the net. Finally I came up with my own. So Not sure whether it is traditional or not. But the taste was amazing. Give it a try
Ingredients:
Mixed vegetables – 2 cups ( I have used Carrot, Cauliflower, mushroom and peas)
Spinach puree – 2 cups
Garlic – 5 pods (chopped finely)
Coriander leaves – 1/4 cup
Ginger paste – 1/2 teaspoon
Red chilli powder – 1/2 teaspoon
Garam masala – 1 teaspoon
Coriander powder – 1/2 teaspoon
Roasted Cumin powder – 1 teaspoon
Green chillies – 2-3 (adjust to your spice level)
Oil – 2 teaspoon
Salt to taste
Cream – 2 tablespoon



Method


Heat 1/2 teaspoon of oil and add Garlic, chopped palak and coriander leaves. Fry till they are cooked. Switch it off and let it cool down. When cool down grind cooked palak and coriander leaves with Green chillies to smooth paste using mixie or blender or food processor. Keep it aside. 

Heat the kada and add oil. When hot add vegetables, salt and ginger garlic paste. Fry till vegetables are half cooked. Add red chilli powder, cumin seeds powder, coriander powder and garam masala  powder.  Fry for 2-3 mins. Now add Spinach puree. Mix well Let it cook for 3 mins.

Now add Cream and mix well. Cook till desired consistency

Serve hot
