My kids love pasta..in any form. Beet has an unique flavour and really goes well with pesto. I love every single bite. My son who initially was skeptical about it loved it too. If you want to add spinach to that go ahead. It is an easy way to sneak in vegetables into kids meal! Esp Beet gives a nice attractive color too..So Enjoy!
Ingredients
Pesto
Beetroot – 2.5 (Remove the skin and dice them)
Basil leaves – 15
Coriander leaves – 1/2 cup
Walnut – 15
Small onion – 10
Garlic – 4
Olive oil – 1/4 cup (Olive oil really makes the diff)
Cheddar Cheese – 1 cup
Green chllies – 4 (adjust to your spice level)
Salt to taste
Pasta
Pasta of your choice – 2.5 cup
Salt to taste
Coriander leaves – 1 tablespoon
Method:
Heat the oil in a pan. Add garlic and onion. Fry till transparent. Add Beet and salt. And mix well close the lid and cook it
Switch off the flame. Add Walnut, Basil leaves mix well. Add Green chillies, Coriander leaves, Cheese and mix it
When it cools down…Grind to smooth paste. Cook the pasta according to instruction on the pack
Heat the pan and grinded Beet and cooked pasta. Mix well. and cook for another 5 mins. Add coriander leaves and switch it off
