Kaju Katli is a rich and very popular sweet in India. Actually now a days you get it in all shapes and color. During my childhood this is one of the sweets I felt had less sugar. We always buy from outside. I made this recently and realized this is very simple recipe and quick to make. It also requires only 4 ingredients and requires very less ghee. My sister kids are very fond of this sweet.
Ingredients:
Cashew nuts – 1 cup (I have used baked cashew nuts)
Sugar – 1/2 cup
Water – 1/4 cup
Rose essence – few drops (optional)
Ghee – for greasing
Method:
Grease butter paper and keep it ready. If you have raw cashew just dry roast it in heavy bottom pan till they are crunchy. Let it cool down and grind them into nice powder. Run the blender in short interval to get nice powder. do not over run the blender, the powder turns oily and lumpy. Keep it aside
It should be in little coarse as you see below.Heat the sugar and water in a pan
Heat it till you get 1 string consistency. To check drop the syrup in room temperature water and it should form a string shouldn’t run
Now add powdered Cashew and rose essence if using. Continue to stir till it leaves the side. Switch it off.
