Sooji Poorana Kozhukattai recipe – Kesari Modak recipe – Modagam recipe – Ganesh Chaturthi Recipes – Pooja recipes – naivedyam recipes

Like I mentioned in many of my posts, Kesari  is one of the sweets that comes to my mind when I plan for any Naivedyam as that is one dish which gets consumed without any fuss in my household. So after seeing this in many blogs I decided to try this. I have used raw sugar to make this but you can use white sugar if needed. I have followed my basic Kesari recipe in which I use 1/2 water 1/2 boiled milk for making Kesari. It came out pretty good. My husband was pleasantly surprised
Ingredients


For Kesari
Rawa / Rava / Semolina- 1 Cup
Sugar – 1/2 Cup (If you like sweet u can add more sugar)
Low fat milk – 1 Cup
Water – 1 1/2 Cup
Ghee -1.5 tablespoon
Almond chopped – 2 tablespoon

Cardamom powder – 1 teaspoon
Optional: Raisins – few  ( I have it optional because my kids not big fan of Raisins)

For Outer cover
Rice Flour – 1 Cups
Maida – 1 tablespoon
Water – 1 1/2 Cups
Milk – 1 cup
Salt a pinch

 
Method:
 
First Lets do the Kesari. In a pan, put one teaspoon ghee and fry Almond and raisins(if u are adding) take it out and keep separately.. 

In the same pan put two teaspoon ghee and fry the rawa and keep it aside.

In a heavy bottomed vessel pour 1 cup of milk and 1 1/2 cup of water. Bring it to boil

When it starts boiling, slowly add the rawa and stir continuously till the rawa is thick and cooked soft. 

Now add sugar  and stir continuously. Make sure there is no lump. Add remaining ghee now. Kesari will leave the sides of the vessel. 

Now add cardamom powder, fried almond, 1 teaspoon of ghee and raisins and mix well and remove from stove. When it is warm to handle make small lemon size balls and keep it aside. You can press it in modak mold and use it without  any over skin too. 

Let’s prepare outer skin, Boil 1 cup milk and 1 1/2 cup of water, teaspoon of oil with Salt. Reduce the flame and add the flours and mix well with spoon. 

Switch off the flame and leave it for 3-5 mins. Apply oil on your hand and mix the dough well. Cover it with wet cloth till you need it

For using hand to make Modak

 

Grease ur hands with oil.Make lemon sized rice dough small balls and flatten them as thin as possible like a small cup.Now keep the stuffing ball and keep in middle of the cup as shown below.


Pull around the edges and bring it to center over the top of the filling. Bring it together to form the modak shape.Now follow the procedure for the remaining dough

 

Repeat the process till you make all the modak

Arrange the modak in the greased idli plate and steam it for 10-15mins.After 10-12 mins check if the kozhukottais are done. Once done the outer skin would be shiny and when touched with hand it will nto stick to hand
