Tomato and Cashew Chutney – No Onion No Garlic Recipe

I love to try different chutney. I had this chutney at my friends place who is big follower of hare rama hare Krishna. He also doesn’t eat onion and garlic. Chutney was very flavourful with a flavour of ghee. There is no seasoning in the chutney so I asked for recipe.. His wife shared her version and I have modified for my family taste. This is the first chutney in which Ghee is used for frying chutney ingredients. Loved the flavour.  This is good alternative to tomato onion chuntey, Small onion, tomato and curry leave chuntey, Kara chutney there are other tomato chutney in my blog too (Tomato coconut chutney onion,tomato,coriander chutney). You can use Oil in the place of Ghee too
Ingredients



Ghee – 2 teaspoon
Tomaotes – 2 medium size (chopped finely)
ginger paste – 1/4 teaspoon
Red chillies – 3-5 (adjust to spice level)
Salt to taste
Cumin seeds – 1 teaspoon
Cashew nuts – 1/4 cup
Coriander seeds – 1 teaspoon
Turmeric powder – 1/4 teaspoon



Method:


Heat ghee add cumin seeds, coriander seeds fry for 2 mins. Add cashew, red chillies and fry till brown color

Add tomatoes Fry for 2 mins. Add salt, turmeric powder. Fry till mushy.once done switch it off

Let it cool down once cool down grind to coarse or smooth chutney ( I prefer smooth)

Serve it with uppuma, idli or dosa. Enjoy
