Pesto Puff – Since Sun-dried tomato pesto pasta was super hit (you can find the recipe here.) I wanted to try few more recipes with sun-dried tomato recipe. I had puff pastry at home so decided to make my son’s favorite vegetable puff.
For this pesto puff recipe, I used whatever vegetables I had on hand, but you can use your favourite vegetables instead. Adding eggplant, Broccoli works well too. It is one of the simplest fillings for puff or samosa or even as a bread sandwich stuffing. This pesto gives a nice flavor to the stuffing. This will serve as a good starter or tea time. You can serve this for brunch or breakfast too

Ingredients for making Sun dried tomato Pesto vegetable Puff:
For Sun dried tomato pesto
- Almond – 1/4 cup
- Sun dried tomato – 7-9
- Garlic – 5 pods
- Red chili flakes – 1 tablespoon(adjust to spice level)
- Basil leaves – 20 leaves
- salt to taste
- Olive oil – 2 tablespoons
For Puff
- Mixed vegetables – 1 cup (carrot, capsicum all colors, potato)
- Olive oil – 1 tablespoon
- Puff Sheet – 2
- Pesto – 2-4 tablespoon
Step by step instruction to make sun-dried Vegetable Puff:
Step 1: Make pesto by grinding all the ingredients under sun dried tomato pesto section
Step 2: Heat oil. Add Carrot, potato, and salt. cook for 2 mins. Add the rest of the vegetables and the required salt. Cook it for 2 more mins
Step 3: Add Pesto and 2 tablespoons of water. Cook for another 5 mins. Once done switch it off. Let it cool down
Step 4: Thaw pastry sheet. Cut into the desired size keep the stuffing and fold it
Step 5: Preheat oven at 180 degrees. Bake puff at 180 degrees for 20-22 mins. Turn it in the middle so all sides can be browned
Step 6: Once done serve!
Notes
- You can use other vegetables like Eggplant, broccoli or roasted vegetables
- you can add cheese while making puff
- You can add pine nuts or walnuts instead of almonds or mix of all 3 nuts to make the pesto

Ingredients

- 5 Pods Garlic Peeled and chopped
- 1 tbsp Red Chili Flakes
