Cutlet Pasta is not your typical traditional pasta; it’s a fusion dish tailored to the Indian palate. I had the chance to try it during my previous trip to San Francisco, US, and it quickly became a favorite among my nieces, who highly recommended it. The US offers a wide variety of fusion dishes, and my sons are particularly fond of pasta (as you may have noticed from the numerous pasta recipes on the blog). The version of the dish I tasted was prepared with Indian masala, but my sons prefer the flavors of Italian seasoning. Therefore, I decided to use a combination of Indian spices from the cutlet and Italian seasonings.
While I used macaroni in this recipe, feel free to use your favorite type of pasta. On one occasion, I even used Red Lentil pasta, although I personally lean towards regular pasta varieties.

Ingredients
For Sauce
1Onionsliced
5podsgarlicchopped
2-3tomatoeschopped
1tspoil
1-2tspchili powder
1/2tspturmeric powder
For Pasta
2-3cupscooked pastacook per instruction on the pasta pocket
1.5cupsMixed vegetables (I have used carrot, cauliflower, beans)
1.5tspMixed Italian spice
1.5tspRed chili flakesadjust to spice levels
1tbspCoriander leaves
salt to taste
Instructions
Cook pasta per instruction on the box. Keep it aside
Heat oil in a pan. Add garlic, Onion and fry till transparent. Add tomatoes, salt and fry till mushy
Add turmeric, Chili powders and mix well. Fry for another 2 mins at low flame. Switch it off. Let it cool down. Grind to smooth paste
In the same pan add 1/2 cup of water, salt and vegetables. Cook it
Add grinded paste, 1/2 cup water. Mix well. Add cutlet in small pieces. Reserve few for garnishing. Let it boil.
Add red chili flakes and mixed Italian spices ( I have added in two batches). Mix well. Let it boil
Add cooked pasta mix well. Cook for another 3-5 mins. Add coriander leaves and reserved cutlet. Switch it off

I didn't add any cheese as felt the flavours won't go well. If you prefer add it at the end of course as much as you need
I have used homemade left over cutlets. You can use store brought vege patty. I have used vegetable cutlet with onion, garlic
I have cooked pasta per instruction on the package.
If you don't get mixed Italian herb you can use oregano, rosemary. Adjust to your prefference
