How many of you breaking your head to feed your stay home family something different every day. My sons normally have their lunch outside (at school) during weekdays but weekends at home. But now all meals at home. So I have to think about something new yet everyone in the family will have it. Yes so that I don’t do many dishes. This vegan and tasty sandwich with simple stuffing. I have used the Thai spiced sauce for the stuffing as I had leftover after making Thai style bhel puri. You can do it with your own vegetable, sauce. I am using Tofu in this to make it vegan you can replace it with paneer too.  Pita bread is totally new to me. I got introduced on my first trip to the US like 23 years before. I loved it, it was served with Falafel

Ingredient

 
Chickpea – 1 cup (cooked)
Tofu – 200g (Pan-fried)
Cooked Quinoa – 1 cup
onion – 1  (chopped finely)
Cucumber, Cherry tomatoes – As needed
Coriander leaves – 1 tablespoon
Thai style sauce – 2 tablespoon
Salt to taste
Pita bread – 4
Oil – 4 teaspoons
Butter to toast Pita bread

 
Method:
 
In a bowl take chickpea, Quinoa, Vegetables, coriander leaves. Mix well. Add onion. Add sauce mix well

Stuffing ready. Cut the pita bread for stuffing 

Stuff pita bread with this stuffing. Apply butter and toast it in a toaster or in the oven

Serve hot
