Veg Atho recipe – Atho Burmese noodles recipe – Noodles recipes – Kids friendly recipe

This is one of the street food from Burma it is also very famous street food in India. This is one of the simple noodle recipes which is served with fresh vegetables. I love roasted besan flour flavor. Atho noodles are normally orange in color to get the color food color is added while cooking noodles. I have decided not to add food color. This can be served as a starter or as the main dish. You can prepare all the ingredients beforehand and while serving you can mix it

Ingredients:

Noodles – 500g
Onion – 3 sliced thinly ( 1 for noodle 2 for frying)
Garlic – 5
Cabbage – 1 cup sliced thinly
Carrot – 1 cup sliced thinly
Oil – 2 tablespoon (heated) + oil to fry Onion & Garlic
Salt to taste
Red chili flakes  or chili powder to taste
Roasted gram flour – 2 tablespoon
Food coloring – optional
Lemon juice to taste
Tamarind extract – 2 tablespoon
coriander leaves – 1 tablespoon (chopped finely)
Crackers – 1/4 cup

Method:

Cook noodles with salt and food coloring (if using).

Once done.Drain it.

Heat oil for frying onion. Fry till crisp Remove it

In the same pan fry garlic till brown in color. Remove it

Transfer noodles to the broader vessel. Add carrot, cabbage, reserved onion, red chili flakes mix well
Add oil, lemon juice, tamarind juice. Mix well. Add crackers mix well

Add fried onion, garlic, coriander leaves. mix well. Serve
