How many palak paneer fans here? I am a big fan of it. I have tasted palak paneer rice at my friend’s place recently. I loved the idea of making a one-pot meal with everyone’s favorite palak paneer. I am pretty sure my teenage sons would happy with it. It is one of the easy recipes even beginners/bachelors can try. This is a well-balanced meal with protein from Paneer, Carb from rice, and vitamins from palak/spinach. Kids would love it. Since it is so simple to make it you can make for kids’ lunch boxes. I have added Paneer together when cooking rice. If you prefer to shallow fry and add it at last pls. do so
Ingredients
Spinach – 1 bunch
Green Chillies – 2
Finely Cut Onions – 1 tablespoon
Cumin seeds – 1/2 teaspoon
Coriander powder – 2 teaspoon
Gram masala – 1/2 teaspoon
Cumin powder – 1 1/2 teaspoon
Turmeric powder – 1/2 teaspoon
Paneer – 1 Cup
Onions – 1
Tomatoes – 2 small
Garlic – 4 pods
Ginger – 1/2 inch
Oil – 3 teaspoons
Basmati rice – 1.5 cup
Ghee – 1 teaspoon
Water – 1.5 cups
salt to taste
Method:
Blanch Palak. Let it cool down. Ground it with green chili. Keep it aside
Add 2 teaspoons of oil fry garlic, ginger, onion, Salt fry till transparent. Add tomato fry till mushy. Add Coriander powder, garam masala, turmeric powder, and cumin powder. add 1/2 cup of water. Fry till raw smell goes off. Switch it off.
Let it cool down. Ground to a smooth paste
Heat Ghee in a pressure pan add Cumin seeds let it crackle, Add Onion mixture. Fry for a min. Add Palak paste. Mix well
Required water. Let it boil. Add Paneer
Add rice and required salt mix well. Let it cook till 2 whistles
when it is ok to open it open the lid and fluff the rice.
