I had parppu vadgam from my mum. I used to add it for kootu however these days since my son doesn’t like it So I stop adding. So I had ended up with the stock. So was looking to use it up in oneway or other. So I had decided to try my favourite form yes chutney. It went very well with steamed rice. I will post the vadagam recipe when I get chance. Every one liked the taste of chutney / dip. This can be made as thogayal too.
Ingredients:
Coconut gratings – 1.5 cup
Red chillies – 3-4 (adjust to spice level)
Garlic – 4 pods
Paruppu vadagam – 1/2 cup
Salt to taste
Oil – 2 teaspoon
Mustard seeds – 1/2 teaspoon
Urad dhal – 1 teaspoon
Curry leaves – 10-15
Method:
Heat a teaspoon of oil. Add Garlic and fry for a min. Add Red chillies and paruppu vadagam fry till golden brown. Remove it. add coconut and fry till golden brown. Switch it off
Add all fried ingredients in a blender or mixer or food processor. Let it cool down. Heat 1 teaspoon of oil. Add mustard seeds and let it pop. Add urad dal and curry leaves and fry till dhals are brown in color. Keep it aside.
Grind to Coconut mixture to smooth paste with required water. Add tempered ingredients and grind again. Take it out and serve
